Pork Chops With Mustard-Chive Sauce

4 - thick pork chops

Pork Chop Seasoning:
3 1/2  Lysander All Natural Pork Rub



Mustard-Chive Sauce:
1-1/2 tablespoons butter
1 shallot, minced
1-cup chicken broth
1/3 cup dry white wine
½ teaspoon minced garlic
    salt and pepper to taste
½ cup sour cream
2 ½ tablespoons Dijon mustard
2 tablespoon fresh chives, chopped
   (or 2 teaspoons dried)
1 tablespoon fresh tarragon
   (or 1 teaspoon dried)
8 chive stems for garnish

Put the Lysander Pork Rub in a small bowl. Rinse and pat dry the chops. Apply the seasoning evenly on both sides of the meat. Place the meat in the smoker bag and seal. Cook on a hot grill or in an oven (475 F) for 15 minutes and then lower the temperature to Medium (oven to 375 F) and continue to cook for an additional 20 to 25 minutes. Remove the bag from the oven or grill and allow to rest for 5 to 10 minutes before opening the bag.

While the meat is cooking, prepare the sauce. In a medium-size saucepan melt the butter over med-low heat. Add the shallot and cook just until it becomes translucent, about 1 minute. Add the chicken broth, wine, garlic, salt and pepper. Bring to a boil and reduce to 1 2/3 cup, about 4 minutes.

Add the sour cream, mustard, chives and tarragon. Simmer on low for 2-3 minutes.

Place the meat on the plate and drizzle the sauce over the top and sides of the meat. Garnish with chive stems. Serves 4
